Chickpea, Zucchini Fritters

Need an easy, protein packed, weeknight meal? Look no further with these chickpea, zucchini fritters, courtesy of the blog: Yes, I’m Vegan. ย If you haven’t checked out her blog, definitely take a look, warning, don’t visit hungry, her pictures are drool worthly ๐Ÿ˜‰ Added bonus, you will probably have most of the ingredients in your pantry, who doesn’t love a saved trip to the grocery store?!

*Tip* I didn’t have chickpea flour, so just doubled the brown rice flour, any gluten free flour will do. Also, I had half a lime staring at me on my counter, so I added a few squeezes into the final mixture before frying, which added a nice zing. Otherwise, I wouldn’t stray too far from her recipe, because it was delicious!

Don’t have zucchinis? Any shred-able veggie like carrots, cabbage or potatoes would work. I served mine over left over arugula and white bean salad, yum indeed! Enjoy!

    Hey Charanya, yeah I am so glad you saw, super yummy! I remember making zucchini fritters way back and felt like I was really making something, instead of just putting ingredients together. There is something about mixing with your hands I find so inspiring. Thanks for the great recipe, I was looking forward to left overs for lunch, but they were so good, my husband ate them before I could! Lol. Happy vegan blogging and sharing;)
