If you haven’t checked out her blog, definitely take a look, warning, don’t visit hungry, her pictures are drool worthly 😉 Added bonus, you will probably have most of the ingredients in your pantry, who doesn’t love a saved trip to the grocery store?!
*Tip* I didn’t have chickpea flour, so just doubled the brown rice flour, any gluten free flour will do. Also, I had half a lime staring at me on my counter, so I added a few squeezes into the final mixture before frying, which added a nice zing. Otherwise, I wouldn’t stray too far from her recipe, because it was delicious!
Don’t have zucchinis? Any shred-able veggie like carrots, cabbage or potatoes would work. I served mine over left over arugula and white bean salad, yum indeed! Enjoy!
