Ever wonder what to do with tomatoes that might have fallen off the vine too early? Think no more and make this easy fried green tomatoes recipe! I have never made them and was inspired by some green tomatoes I recently came across. I messed around in the kitchen a little and here we are!
What is the best thing you ever made not following a recipe?!
1 handful of green tomatoes
1/2 cup soy milk
3 teaspoons brown rice flour
3 teaspoons cornmeal
1 teaspoon garlic powder
Pinch of salt
Earth Balance butter for frying
Cut the tops off the tomatoes (save for compost collection) and slice into discs
Combine the dry ingredients and mix with a fork to incorporate all textures
Dip the tomato slices in the soy milk, shake off excess and then coat in the flour mixture
(As tempting as it is to do them all at once, I found it more effective to do one at a time)
Heat a pan with Earth Balance butter
Once the butter is all melted and sizzling add the coated tomatoes and fry for 5-7 minutes on each side, or until golden brown
Serve over a bed of arugula or your favorite green! My dipping sauce of choice today was vegan mayo mixed with sriracha, with a splash of pickle juice. Mix all together util a creamy texture and pink color is formed, drizzle on top of the fried tomatoes and enjoy!
