Wondering what to do with those carrot tops? Me too! I love buying carrots from the farmer’s market, but I don’t want to waste the tops, so recently I have been thinking about trying a carrot top pesto and voilà here it is:
1 bunch of carrot tops
3 large cauliflower florets
1/4 cup olive oil
1/3 cup nutritional yeast
Salt to taste
Sprinkle of granulated garlic flakes
Add all ingredients into a food processor and blend until a creamy constancy is formed.
*I had to stop a few times to push down the sides, taste and add a little salt and water until the consistency and flavors were there*
