Meatless Monday is Gazpacho!


Summer days call for cold, refreshing soup and that means one thing- gazpacho.  It’s super fresh, filling and flavorful.

5 large tomatoes, save one to add after blending.
1/2 yellow cucumber (inspired by my local farmers market)
1 cucumber, save 1/4 to add after blending.
Handful of asparagus
Juice of one lemon
Salt and paper to taste
Tablespoon of your favorite hot sauce


Rough chop all ingredients and let sit for about 20 minutes in a large bowl to marinate flavors.
Blend the vegetable mixture in a blender, Vitamix or food processor.
Drain the  soup and add one freshly chopped tomato and a thick chunk piece of cucumber.
Drizzle with lemon juice and garnish with a sprig of parsley.
Stick a few tortilla chips in and enjoy;) I had an extra edible squash blossom I picked up from the farmer’s market and added it on top of mine. What will you garnish with?
