Summer seems to be hanging on here in NYC and I am inspired to whip up a quick batch of fresh salsa, all with in season, local ingredients! I love using tomatillos as it gives the salsa a thicker base when blended.
1 package of tomatillos (preferably from the farmer’s market)
1 red onion
1 clove of garlic
2 Tablespoons of olive oil
1/2 pint of fresh, baby tomatoes
Pinch of salt
Peel the husks off the tomatillos and set aside
Peel and quarter the onion
Cut the baby tomatoes in half
Cut the garlic in half, removing the skin
Quarter the tomatillos and place in a medium bowl
Add the onion pieces, tomatoes, garlic, oil and salt to the tomatillos and work with your hands, ensuring all ingredients are covered in the oil, because who doesn’t love a good oil and tomatillo massage!
Pour the mixture into a baking pan and bake for about 20-25 minutes on 400
Remove from the oven
When cool, place in a food processor and blend until your favorite salsa consistency.
You could definitely add some spice, cilantro or citrus, but today I just wanted to make a simple salsa with all things local and in season:) What’s your favorite salsa ingredient?
