Baked Apple and Pumpkin Muffins- Vegan and Gluten Free

It’s rainy and chilly here in NYC and that means staying in and baking this morning!  The gluten free, vegan muffin quest continues, although not perfect, I just had to share these mini muffins with pumpkin puree and baked apples. They came out super small, a little mushy, but the taste was there. I will keep working on this, but in the meantime, I am open to any muffin tips!

Ingredients:
2 medium apples
4 Tablespoons of pumpkin puree
1 1/2 cups of soy milk, unsweetened
1 cup of gluten free flour
1/2 Tablespoon of baking powder
1 teaspoon of vanilla
Sprinkle of cinnamon and nutmeg
Pinch of salt

Method:
Follow my baked apple recipe, set aside
Pre heat the oven to 400 degrees
Sprinkle the milk with nutmeg
Sprinkle the flour with cinnamon
Combine all dry ingredients and mix until smooth
Add wet ingredients and mix well until smooth, adding more milk if needed to make a creamy batter
Run a potato masher through the baked apples and incorporate into batter, ensure the pieces are spread well throughout
Spoon into a greased mini muffin tray and bake at 400 degrees for 35-40 minutes, checking the middle and bottoms around 30 minutes
