Chocolate Chip Pancakes- Weekend edition


It’s another snowy morning in NYC and well that just means one thing for me, pancakes! Chocolate chip pancakes were a regular affair in my house growing up on the weekends.  There is something about the comfort of the crisp outside and fluffy center that makes me smile and I had to share this simple recipe!

1 1/2 cup Bob Red Mill’s pancake mix
1 cup soy or almond milk
1 1/2 teaspoon egg replacer or apple sauce
Generous sprinkle of Enjoy Life Chocolate Chips (be careful when getting vegan chocolate chips, some brands sneak barley into the ingredients which is a problem on the gluten factor!)


Add 2 Tablespoons of warm water to the egg replacer and whisk until frothy
Combine all ingredients in a large mixing bowl and work with a fork until creamy and smooth
Add a teaspoon of Earth Balance into a heated pan
By the spoonful, add the pancake mixture into the pan, be careful to spread out the batter, they will spread out as the cook
Wait for bubbles to appear in the batter and flip
When a golden brown crust forms, they are ready
Place cooked pancakes on a plate, it is best to eat one right from the pan, you know, to make sure they are ok 😉
Stack the pancakes and add some chocolate chips on top
Serve with agave nectar or maple syrup!
