This super simple noodle dish is so comforting and satisfying and perfect for an easy lunch, dinner or snack! I love noodles and pasta was one of my favorite foods as a kid. We often went out to eat for Japanese and udon noodles were my go to. But now being gluten free, udon is a no go- enter rice noodles! This dish is packed full of antioxidants from the scallions, calcium from the kale and natural calming effects from the mushrooms, it’s a bowl full of healthy goodness!
2 scallions, peeled and chopped
Handful of shiitake mushrooms, roughly chopped
Handful of kale, roughly chopped
Drizzle of olive oil
1 teaspoon of your favorite chili garlic sauce
Splash of Tamari
Boil a pot of water and cook your noodles according to the package
Sauté the scallions, mushrooms and kale in a little bit of olive oil
Add a touch of garlic chili sauce
When the noodles are cooked, drain and add to veggie pan
Toss with the Tamari and serve up your noodle bowl!
