Meatless Monday- Homemade Chocolate Lollipops

Whose says you can’t eat chocolate when you are vegan? Not only do I love chocolate I have taken to making my own chocolate lollipops, just in time for Valentine’s Day. It’s less than a week away and these treats will keep you busy until the time to deliver your valentines. As a kid, I would scribble my paper valentines the night before on the carpet of my bedroom floor. Flash forward 23 plus years and now I swap cardboard for chocolate.

These are a perfect for your valentine, sweetheart, a friend, work college, parents or kids!

What you will need:
Plastic or silicon molding tray
Lollipop sticks

Add one bag of chocolate chips to a pan on medium heat
Add a splash of soy milk and stir
Sprinkle the salt and cayenne and stir to incorporate
Keep adding the milk until a creamy texture is reached, be careful not to add too much
Lower to a simmer
Add the peanut butter with the toothpicks to the design portion of the mold, this is tricky, be careful to stay in the mold design
