Meatless Monday- Butternut Squash Soup

There is no sign of spring here in NYC which for me means more soup! This creamy soup is delicious and will be sure to warm you up!

Ingredients: 
1 butternut squash
Half a celeriac root
6 cloves of garlic
Splash of olive oil
2 cups of water
2 Tablespoons of nutritional yeast
Dash of Tamari (or soy sauce for non gf)
1 teaspoon of mustard
Salt and Pepper to taste
1/2 teaspoon of turmeric
1/2 teaspoon of paprika
Handful of chopped cashews to garnish
Handful of fresh, chopped chives

Method:
Cut the squash in half and remove the seeds
Add three cloves of garlic to each hole in the squash
Drizzle the olive oil on each half
Roast in the oven for 40-45 minutes
Meanwhile, remove the skin of the celeriac and cube
Saute the chopped celeriac with olive oil and garlic
Add the turmeric and paprika and cook for 10-15 minutes or until soft
When the squash is cooked, remove from the oven
When cool, scoop out the middle and add to a blender
Add the following: water, Tamari, nutritional yeast, mustard, salt and pepper and blend
When smooth, pour into bowls and garnish with chives and chopped cashews
