When weeknights get busy this easy pasta is a go to for me. I especially like the kale for added vitamin A and C and the nutritional yeast for B12! Matched with the soft mushrooms, crispy onions and garlicy flavors this pasta is a comforting dish that I hope will become a favorite of yours too!
Favorite dry or fresh pasta
Splash of olive oil
1 clove of garlic
1 red onion, thinly sliced
1/2 pound shiitake mushrooms, stems removed and sliced
Large handful of kale, roughly chopped
Sprinkle of nutritional yeast
Sautée garlic and onions in a splash of olive oil
Add sliced shiitake mushrooms and cook for 7-10 minutes until soft
Season with salt
Add a large handful of kale and cook for another 5-7 minutes
Throw over cooked pasta
Sprinkle with nutritional yeast and serve
