Meatfree Monday- Satay Rice Noodles

I don’t know about you, but I could drink satay sauce with a straw all day. Today I am adding it to noodles, but don’t hesitate to have a straw near by;)

Ingredients: Serves 2

1/2 package rice noodles, cooked according to the package

For the Sauce:
1 cup almond butter
1 cup water
1/4 cup Tamari (gluten free soy sauce)
1 clove of garlic
Squeeze of sriracha

For the veggies:
1/2 red pepper, thinly sliced
1/2 cup fresh peas, either in pods or shelled

Method:
Add all ingredients to a food processor or blender and blend until smooth
Spice with extra Sriracha, according to taste

Pour over your favorite rice noodles and top with the above raw veggies for a nice crunch and added nutrients!
