Meatless Monday- Picnic Season Potato Salad!

It’s officially spring in NYC and that means BBQ and picnic season is upon us!  I am working on some side dishes for a simple and delicious summer of great eats with low stress and today’s feature is a creamy potato salad.  Not only is it comforting, but nutritious with the added turmeric and it’s anti inflammatory benefits!

Ingredients:
8 small to medium red potatoes, one inch cubed
1 red onion, diced
1 scallion, diced
1 red pepper, diced
Handful of parsley, chopped
1/2 cup vegan mayo
1/3 cup capers w the vinegar
1 tablespoon of mustard
1 teaspoon turmeric, added anti inflammatory benefits!
Salt and pepper to taste

Method:
Boil a large pot of water
Add cubed potatoes, with skins on for extra vitamins!
Boil for 12-15 minutes, checking along the way for fork tender tots
Combine diced peppers, onion and scallions
Stir in mayo, mustard and turmeric, mix until all coated and combined
Add salt and pepper to taste
Chill and serve at your next BBQ or gathering;)
