You know it is a happy Friday when you discover an amazing, vegan cheese company! A friend recently share this N.P.R. article, Hold The Mammal: Daring to Make Dairy-Free Cheese From Nuts article and I was drawn to Punk Rawk Labs.
How have I not heard about them!? Punk Rawk Labs is an organic, plant- based cheese company, free of gluten and soy in Minneapolis. Now, I am not new to vegan cheese, but I have to say the creamy, depth of flavors and textures going on here is so delicious and satisfying. I was so impressed with the four flavors of cheese they offer, Original, Herb, Nacho and Smoked that I knew this called for more than just a cheese plate, but first, a cheese plate.
The following sequence of events was an evening of cheese tasting, a lot of “mmmmm” followed by many delicious adjectives.
After some solid cheese tasting, my taste buds screamed for a recipe highlighting such flavors and instantly classic pizza came to mind.
I made a cauliflower pizza crust, topped with homemade red sauce and finished with fresh basil and dollops of their Herb Nutmilk Cheese sprinkled on top. Let’s just say dinner had little conversation that night and there were no left overs.
Punk Rawk Labs has an amazing product, message and nomness going on (I might have invented this word for them) but it is true and you need to get involved. My recipe brainstorming doesn’t stop here and this Monday I will be featuring a Stuffed Shells recipe to enjoy with Punk Rawk Labs Original and Herb varieties. Check back then;)
