If you read my post on Friday, you know how in love I am with Punk Rawk Labs, vegan cheese company. After the delicious pizza I made topped with their herb style creamy goodness, I decided to have a go at stuffed shells.
Stuffed shells was something we had often growing up as a kid and I have recently been determined to make a vegan, gluten free version. For this recipe I could only find small shells, but I am sure somewhere you can find larger gluten free shells.
1 package gluten free pasta shells
1/2 package (for the small shells) Punk Rawk Labs herb or original cheese
Homemade red sauce or your go to jar with minimal ingredients
Handful of fresh basil
Sprinkle of nutritional yeast
Optional: Sprinkle of breadcrumbs, gluten free option
Cook pasta according to package
Drain, cool and set aside
In a large, rectangle baking dish, spoon enough red sauce to coat the bottom of the whole dish
One by one, take a shell, fill it with about 1/2 teaspoon of Punk Rawk Labs cheese and place on top of the red sauce
Continue until the dish is filled
