Meatfree Monday- Chickpea ‘Tuna’ Salad on a BAGEL

     Prepping salads on the weekend make for easy weekday lunches. Today I am sharing an old favorite, made vegan, Chickpea ‘tuna’ salad. You can make a big batch on Sunday, keep it in the fridge and use to top salads, dip with crackers or have as a bagel sandwich, which is obviously preferred!!

Ingredients:
2 cans of chickpeas, drained and rinsed
1 cup celery, finely chopped
1 orange bell pepper, finely chopped
3 Tablespoons capers
1/2 red onion, finely chopped
1 1/2 medium dill pickle, finely chopped
1 medium carrot, peeled and finely chopped
Small handful of pickled, spicy red peppers, I get mine at the farmer’s market, but any type of spicy peppers would do, finely chopped
1/4 sliced avocado, to top bagel
About 4-5 red onion slices, to top bagel
1 cup vegan mayo
1 Everything Sweet Note Bagel, directly from frozen, microwave for 1 minute, cut in half and toast
For the bagel smear
3 Tablespoons of vegan mayo, 1 Tablespoon of your favorite hot sauce, stir and smear on each half of toasted bagel

Method:
Pulse the chickpeas in a food processor until a chunky/tuna like texture achieved, careful not to pulse too much or you will end up with hummus, if you don’t have a food processor, just chopped until small/flaky texture
Combine with the rest of the veggies and stir
Add the mayo and stir until all veggies and beans are covered
Add a large spoonful of the ‘tuna’ onto the bagel
Top with avocado slices and red onion
Add the top of the bagel, bite, smile and enjoy!
