My suburbia surprises continue to inspire me and this week it is a storefront of the Skinny Buddha stall I saw at the local White Plains farmer’s market a couple weeks ago. Skinny Buddha is an all organic cafe with many vegan, gluten free options. I first learned about them at the White Plains farmer’s market, held on Wednesdays and they had me at the kale salad.
The soups are winners as well!
After talking with the lovely man behind the booth, I learned they also have a take out window in Mt. Kisco and were soon opening a storefront in Scarsdale! This storefront is now open and the options are delicious.
I went again with the kale salad, because it is creamy goodness with all the Vitamin K you need!
And a side of quinoa for added protein.
I am so happy I found Skinny Buddha and will definitely be back. They are also at the Chappaqua farmer’s market on Saturdays. So even when I am back in the city, it is a quick train ride to the burbs for some zen eats.
