I love fresh herbs, but hate to see them go to waste. When I start to see them wilt, I add them to a glass of water and stand them upright, like a bouquet of flowers ,and put them back in the fridge. Recently, I had some cilantro and planned to make tacos, but never got to it and didn’t want it to go to waste. Cilantro pesto it is!
1 bunch of cilantro, or about 2-3 large handfuls if you are growing your own, stems and all
1/4 cup olive oil
1/4 cup pine nuts
Juice of 1 lime
Sprinkle of salt
Add all ingredients to a food processor and blend until creamy, add more oil or a splash of warm water if needed
Serve over soup, salad, a baked potato or enjoy with crackers; it adds the perfect fresh zing to any dish.
