Clean out your pantry and fridge with this easy stuffed avocado with beans, veggies, your favorite salad dressing or whatever you have on hand!
1 can of black bean
1 1/2 carrots
1/2 red onion
4 small pepperoncini
1/4 cup favorite salad dressing
Cut the avocado in half and remove the pit, set aside
Drain and rinse the beans and add to a large mixing bowl
Peel and finely chop the onion and carrots, add to the bowl
Finely dice the tomato, add to the bowl
Remove the stems of the pepperoncini and finely chop, add to bowl
Add the salad dressing and stir to cover all ingredients
Slice the avocado lenthwise, be careful not to cut through the skin
Slice the avocado in the opposite direction
Spoon the bean and veggie mixture on top of the avocado half
Wrap in tin foil for a healthy snack on the go this week!
