Rosemary and Sage Butter Sauce

Ingredients:
1 1/2 sprigs of fresh rosemary
4-5 leaves of fresh sage
2 cloves of garlic
1 small red onion
2 handfuls of shittake mushrooms
2 Tablespoons of olive oil
2 Tablespoons of vegan butter, Miyoko’s is now in the butter market!
Pinch of salt

Method:
Rinse and dry the herbs
While the herbs are drying, peel and finely chop the garlic and onion
Finely chop the herbs, set aside
Heat the oil in a medium pan
Add the onion and sauté for 3-5 minutes, until gently getting soft
Add the garlic and continue to cook for 10 more minutes, stirring continuously
Add the herbs to the garlic and onion mixture
Take a moment here to smell the herbs, garlic, onion and oil!
Add 1 Tablespoon of butter, stir
Add the shiitakes and continue to stir
Add the remaining butter, cook for 7-10 more minutes
If needed, add a splash of water to loosen the flavors
Salt to taste

This savory, salty and fresh sauce is perfect over pasta, potatoes or grilled veggies.
