Eggless Salad

Recently, half a block of tofu and a can of hearts of palm were staring at me and this eggless salad recipe was born! The turmeric not only adds that yellow, eggy color, but the anti inflammatory benefits are a bonus! My sister recently served a bean salad in radicchio leaves and the presentation was beautiful. That is the inspiration for how this is plated here.

Ingredients:
Half a package of tofu, any type will work
1 15 oz can of hearts of palm
5 stalks of celery
2 scallions
For the dressing:
1/4 cup vegan mayonnaise
Splash of apple cider vinegar
1 Tablespoon of capers
1 Tablespoon garlic powder
1 Tablespoon onion powder
1 teaspoon ground turmeric
1-2 Tablespoons of mustard
Squeeze of sriracha

Method:
Drain and chop the tofu and hearts of palm into 1 inch pieces
Rinse and chop the celery and scallions
Combine in a medium mixing bowl
Directly into the bowl, add the dressing ingredients and stir to combine
Season to taste
Serve with cracker, in a sandwich or on top of a salad
