No Joke, I love Artichokes


I would love to share something creative for April Fool’s Day, but all I came up with was that artichoke rhymes with joke and recently found a crowd pleasing recipe from Bon Appetit Magazine and it is the perfect day to share.

I adapted this recipe based on what I had and it came out wonderfully warm, with a slight spice to balance the tomato sauce. I also cheated and used artichokes packed in oil already cooked with the long stem, yum!


1 package of pre cooked artichokes, long stem

1 cup fresh tomato sauce

1/2 red onion, finely chopped

1 clove garlic, minced

Splash of red wine

1/2 lemon

Nice dash of dried hot chili flakes

Parsley, to garnish

Sprinkle of gluten free breadcrumbs


Gently sauté the garlic and oil, adding the onions soon after

Cook for about 7 to 10 minutes until soft and tender

Add the tomato sauce, wine and chili flakes and continue to cook for another 10 minutes

Slice the artichokes in half and lay in a dish

Squeeze the lemon over the artichokes

Top with the fresh sauce, chopped parsley and gluten free breadcrumbs, enjoy!
