A Caprese salad is one of the simplest, yet delicious dishes you can make for a quick snack, light lunch or part of an antipasto to wow friends. This salad resembles the colors of the Italian flag and possibly better known as an Insalata Caprese. It is said the green stands for the lush Italian plains, the white for the icy, snow capped Alps to the north and the red for blood shed in their war of Independence.
In this dish the colors might not carry the same weight of the flag, but the taste is soft and powerful. The creamy mozzarella pairs with the juicy tomato and both compliment the fresh, earthy basil. A sprinkle of salt, drizzle of olive oil and balsamic vinegar is the perfect salty, tang balance that brings all the textures and flavors together. Just like how each color of the flag brings Italian history alive, each ingredient unites these flavors for the perfect taste.
1 ball vegan mozzarella
Small handful of basil
Pinch of salt
Drizzle of olive oil and balsamic vinegar
Slice the tomato and Miyoko’s mozzarella into discs
Tear the basil into bite sized pieces
Arange the mozzarella slices on a plate and top each one with a slice of tomato
Add a couple tears of basil on top of that
Sprinkle the salt, drizzle the oil and add tiny splash of vinegar
