BBQ season is upon us where it is all about the side dishes. Creamy, coleslaw is the perfect addition to your table. This colorful dish is full of vitamins and nutrients so you don’t have to second guess that second helping.
1/2 purple cabbage
1/2 green cabbage
1 cup vegan mayo, I used Just Mayo
5 Tablespoons rice vinegar
Cut the cabbages in half, keeping the stem on, save half
Trim and remove the outer leaves
Thinly slice both cabbages into long, thin slices, add to a large mixing bowl
Remove the skin of the shallots and finely chop, add to the cabbage
Peel the carrot and grate into the other veggies
Hald the lemon and squeeze both halves on top of the slaw
Measure the mayo into a smaller bowl and add the vinegar
Mix well adding more vinegar if needed to make for a smoother, runny texture
Pour the dressing over the slaw and mix well, covering every leave and root
Keep cold and enjoy!
