With tomatoes starting to pop up at the farmer’s market and Cinco de Mayo this week, it only means one thing in my kitchen, homemade salsa! This recipe is so easy and fresh and can be made a head of time for your next party! Perfect to dip in your favorite veggies or chips and here I toasted some gluten free tortillas and chipotle oil for a nice crunch and spice to compliment the fresh cilantro and lime.

4 medium sized Roma tomatoes
4 scallions
1 clove of garlic
1 serrano chili pepper
1/2 red chili pepper
1 large handful of cilantro
Splash of olive oil
Juice of 1 lime
Salt and pepper to taste


Rinse and dry the tomatoes
Cut into chunks
Trim and slice the scallions
Peel and chop the garlic
Trim and deseed the chilis
Rinse and dry the cilantro
Add all chopped ingredients into a bowl
Transfer to a food processor
Add the olive oil, lime juice and salt and pepper
Gently pulse until a chunky, yet smooth texture is formed
Be careful not to over process or you will end up with more of a gazpacho!

For the tortilla chips
Slice your favorite brand of tortilla wraps into triangles
Heat a pan with 2-3 Tablespoons of olive oil
Add the tortilla triangles
Sprinkle with salt and drizzle with chipotle oil
Flip, repeat and set on a paper towel to dry when crispy


Serve with salsa and enjoy!
