Pesto is one of my go to, easy meals to throw over pasta, potatoes or dip with crackers. Not only is the smell fantastic, the fresh herbs bring added nutrients and it becomes a simple, homemade dish. As you know from my many pesto posts, I love to use different herbs and flavors to create new recipes and this one is no different. Fresh garlic scapes ring in the spring for me and compliment basil like a match made in herb garden heaven. The garlic is the spring gem we wait for all winter, waiting 8 months from planting when all of a sudden it seems, the scape forms and is a magical connection between your food and the greater food system where I feel like I’ve won. The basil, planted from seedling with my dad for his herb garden is a reminder that herbs give all spring and summer long when you give them the gift and love of water and sun in return.
This pesto recipe is not only a gift, but a winner as well. Make it stat, you’re taste buds will thank you!
1 cup fresh basil
1 garlic scape
1 handful baby kale
1/4 pine nuts
1/4 cup olive oil
1/4 nutritional yeast
Salt to taste
Combine all ingredients in the food processor and blend until a smooth texture in formed
Add a tad of water if needed
Top with Follow Your Heart Parmesan and enjoy!
