Easy, Creamy Peanut Noodles


My mom’s sesame noodles were a childhood favorite and now I am on a mission to make them a go to, easy recipe that isn’t just for special occasions. . Thus, this easy, creamy peanut noodle dish was born. Simple, yet savory flavors make this a noodle bowl that you will keep in your recipe box week after week. Enjoy.

1 cup peanut butter (almond, soy nut, any nut butter would work)
3/4 cup Tamari sauce
3 Tablespoons of rice vinegar
2 cloves spring garlic, plus one garlic scape, if not spring garlic, just one clove
1/4 ground chili flakes
1-2 pinches of red chili flakes
1/3 cup vegan mayo

Bring a large pot of water to a boil
Meanwhile prepare the sauce
Add the nut butter, Tamari, garlic (reserving the scape) and chili powder to a blender
Blend until smooth
Adding water if a smoother consistency is desired
Cook the pasta according to the package, drain and rinse with cold water
Add noodles to a large bowl, add the nut butter sauce and mayo, stir until all flavors combined
Chop the garlic scape very fine
Plate a bowl with the noodles, top with the chopped garlic scape and sprinkle with red pepper flakes


Seconds are almost mandatory they are that good!
