Ranch is an American classic and served nation wide as salad dressing, dip or accompaniment to pizza, veggies and basically anything. It was created in the 50s and became the most popular salad dressing in the United States in 1992. Ranch dressing has been in some recent news with Grub Street featuring its past paired with present highlights such as the New York Times article showcasing a tahini version from the hit vegetarian eatery Superiority Burger in NYC. Ranch is such a go to for so many people and a delicious, moreish, versatile dressing/dip that I present my take on it. This version packs the protein and healthy fats so you can keep on dipping.
1 cup of cashews (soaked overnight if not using a high speed blender)
1 cup of water
1/2 juice of 1 lemon
2 Tablespoons apple cider vinegar
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
Small handful of scallions or chives (optional)
Combine all ingredients in a blender and blend until smooth
Rough chop scallions or chives to garnish
