Quick question before we start, where is the line between avocado toast & guacamole on bread? Asking for a friend….
I might be late to the avocado toast food trend, three years late, according to Guest of a Guest and Well and Good, however being late isn’t always bad. The good news is, avocado toast is still a thing, a delicious thing and there are so many great places to sample various versions around the city.
Want even more good news is? If you don’t want to spend upwards of $8/9 for this trendy item, making it at home is super easy and can be prepped ahead of time for a timesaving, on the go breakfast.
While displaying it on a lovely white plate with an Instagram worthy filter is beautiful, it isn’t always the reality. I normally roll with mine in tin foil and embarrassingly enough, eat it on a subway platform on the way to work.
Whatever works for you, get it done and nom on with your avocados, after all, it’s the good fat!
Ingredients: *Makes two slices of toast
Two slices of your favorite toast, sourdough anyone?!
1/8 red onion
1 small tomato
1/2 scallion, the green parts
Salt to taste
Optional: Sriracha, your favorite hot sauce and/or my homemade cashew ‘parmesan’
Scoop out the avocado, add to a medium mixing bowl
Finely chop the onion and tomato
Roughly chop the green scallions
Add the onion and tomato to the bowl and smash together
Add salt to taste
Spread the avocado mixture on your toast and sprinkle with the scallions
Optional: Drizzle Sriracha or hot sauce and/or sprinkle with the cashew parm
Don’t have the time to chop onions and tomatoes? Add a tablespoon or two of jarred salsa to your avocado instead
