Truffle, ‘parmesan’ fries were once a favorite at a local restaurant, but skip the deep fryer, switch the cheese for your own homemade cashew parm, swap the white carbs for carrots and voila, homemade carrot fries that pack all the flavor!
7-8 medium carrots
3 Tablespoons of my cashew ‘parmesan’ recipe + 2 teaspoons of garlic and onion powder added to the final product
1 Tablespoon of olive oil
1 teaspoon of truffle or favorite special oil
Wash and peel your carrots
Slice into fry shapes
Place on a baking try and drizzle the olive oil on top and sprinkle with salt
Bake at 350 for about 25 minutes, checking half way and flipping
Remove from the oven and toss in the cashew ‘parmesan’ mixture
Plate and drizzle with truffle oil (truffles not your thing? Not to worry, drizzle any favorite oil, chili, herb, anything goes!) Comment below with your favorite oil.
