I might be late to the chia pudding party, but late is better than never!
It was my first try and I had fun incorporating different flavors to the traditional banana and vanilla ones I have read about, this vegan, gluten free, fiber filled dessert is here to stay.
Here goes for round 1:
1 cup almond milk
1/3 cup chia seeds
1/3 cup seeded and finely chopped fresh cherries
1 date, seeded
1/2 a banana
1 Tablespoon chopped organic, fair-trade, vegan chocolate
1 teaspoon vanilla
1/4 of a lemon
Dash of salt
In a metal bowl, whisk the almond milk, chia seeds and pinch of salt, set aside in the fridge
Blend the date and banana in a food processor until sticky
Add the chopped cherries, chocolate and vanilla to the date and banana mixture in another bowl
Stir the fruit mixture until all ingredients incorporated, squeeze the lemon and stir
Spoon fruit mixture in the glass jars you will be serving the puddings in
Take the chia mix out of the fridge and give it a stir again, some of it will have already settled, so stir well.
Pour the chia mixture over the fruit, seal with a lid and refrigerate for few hours before serving. Enjoy:)
