I came across this delicious looking tofu scramble on the One Green Planet’s Recipe Monster page and boy I am glad I did!
I adjusted the ingredients with what I had lying around and voila, the curry tofu scramble is here:
1 package extra firm tofu
1 medium red onion
1 medium green pepper
4 small white potatoes
Handful of shiitake mushrooms
Few shakes of curry powder
Few shakes of Old Bay Seasoning
Salt and pepper to taste
Heat a few glugs on olive oil over medium heat in a large sauté pan
Chop the potatoes, with skins on, into small chunks
Add the potatoes to the pan, continue to stir to prevent sticking
Finely chop the onion and add to the pan
Dice the green pepper, add to the pan
Continue to stir
Roughly chop the mushrooms and add to the pan
Let the flavors incorporate and mix while continuing to stir
Drain and pat the tofu and add to the pan, mash with a fork until crumbly
Add the spices and stir
Season, taste and adjust until your liking
*I always like a few extra shakes of curry powder and Old Bay;)
Serve with avocado slices, fresh tomatoes and your favorite green, arugula pictured here.
I poured a little olive oil and sprinkle of salt into the used avocado shell, and drizzled over the arugula and tomatoes.
