Looking for a healthy Halloween treat to make with your kids, students or friends? I originally saw this idea on The Plant Strong Vegan made with guacamole, but I wanted to keep it seasonal to New York in the fall, so went with a spinach hummus! I think this will be a Halloween staple moving forward!
2 yellow peppers
1 can of chickpeas
4 large handfuls of spinach
Small handful of cilantro
Half a lemon
2 Tablespoons of olive oil
Pinch of salt
*Adult job* Slice the top off the pepper, pull out the middle and carve a scary and spooky face on your pepper. Set aside
Rinse the chickpeas, spinach and cilantro
Combine all ingredients in a food processor
Add the lemon, favorite kid job!, and oil
Add the salt yourself, not to add too much, just to balance the watery spinach when blended
Scoop into the carved pepper and let the kids eat out of the edible bowl!
