Peachy Pancakes


Messing around in the kitchen this morning and these lovely pancakes were born! It was super easy and of course delicious;)
I added the fresh peach for some added texture and nutrients.  The extra Vitamin C and antioxidants are a great way to start your day!

1 cup gf flour
1/2 soy milk (or any nut milk)
1/2 a fresh peach, finely chopped
1/4 teaspoon baking powder
Pinch of salt

Combine all ingredients and mix well until smooth.
Scoop a spoonful into a pre heated, non stick pan.
When small bubbles form, they are ready to be flipped, about 3-4 minutes per side.
Top with blueberry or strawberry jam.
