Spring Rolls- the easiest version

1 large carrot,  halved, quarter and thinly sliced- lengthwise
2 radishes, thinly sliced
3 ramps, cleaned well and thinly sliced


Dipping Sauce:
Add a spoonful of peanut butter to a bowl and add in Tamari, stir with a rapid whisking motion until smooth. I added a few drops of a mango hot sauce I had as well!


Prepare a clean dry surface and get ready to roll.
One at a time, soak a wrapper in warm to hot water, submerge until soft.
Take out and lay on surface.
Take a spoonful of  vegetable mixture and place about a third of the way up the wrapper.
Take the bottom of the wrapper and fold over the vegetables and tuck, slowly roll the wrapper, tucking in the sides until a roll is formed.
Set aside and repeat until desired rolls are formed.

Grab one, dip and enjoy!
