Serve your next stir fry in a cabbage leaf for less carbs and added nutrients! This is a great gluten free tip too, I am so into cabbage leafs as bowls, or wraps, what will you serve with a cabbage leaf?
1 package of tofu, drained and chopped into squares
1 clove of garlic, peeled and finely chopped
1 onion, peeled and chopped into slices
1 handful of mushrooms, I love, love shiitake!
1 medium cabbage leaf, carefully peal away from the head of cabbage, careful not to rip it as it will be your bowl and we don’t want any sauce leaky out!
A few glugs of Tamari
Squeeze of sriracha
Sprinkle of sesame seeds
Mix the Tamari, sriracha and sesame seeds over the cubed tofu, place in a bowl and freeze (this will help firm up before cooking
Lightly fry the garlic and onions
Add the mushrooms when the onions begin to be translucent
Remove the tofu from the freezer and add to the garlic, onion and mushroom mixture
Let all the ingredients dance in the pan and when they start to stick a bit, add a splash or two of more Tamari, squeeze of sriracha (spice level depending) and stir
When the tofu is slightly brown you know it is ready
Spoon the mixture into your cabbage leaf and serve
I like to eat a few bites with chop sticks and then roll it up and eat like a wrap! Delish indeed!
